Shiitake mushrooms are a lovely, sweet, nourishing tonic which also help to resolve phlegm and dampness in the body. They help to strengthen our Wei Qi, which is the protective layer of the body most exposed to outside pathogenic influences. Xiang Gu, as they are known in China, are traditionally classified as a herb for the Spleen, Stomach, and Lungs. This translates to them working both on our respiratory systems and our digestive systems, and are believed to increase our immunity and longevity on both fronts.
In Japan and elsewhere modern research has shown shiitake mushrooms to have nutritional, immune supportive, and anti-cancer and adrenal supporting properties. They also have anti-viral and anti-bacterial properties.
For those looking to lower meat consumption, shiitakes are an excellent choice as they contain all 8 essential amino acids, as well as essential fatty acids involved in muscle growth and weight loss. They contain beta-glucans - known to be anti-inflammatory, support the immune system, and benefit the heart and circulation. Other compounds have shown the ability to help with cholesterol levels.
And with their naturally occurring Vitamin D, they are perfect for adding into our diet during this time of waning sunlight - and throughout the Winter ahead!
You can buy them fresh, dried, powdered, and in capsule form. I prefer them fresh for soups and stirfries, but always have the dried ones on hand for adding to soup stocks and broths - a delicious and nutritious addition.
